We found out all about maple syrup production today, down at Five Rivers. First, drill a hole (as demonstrated by the Girl on this practice log). Then tap in a spout, called a 'spile'. Collect the sap in a bucket (this can take 24 hours). Then boil the liquid until it has reduced by 40 times. 
The sap-collecting season only lasts a couple of weeks and requires the right conditions - below freezing at night, above freezing in the daytime. And as described, the production process is time and labour intensive, so no wonder maple syrup is rather expensive. Worth it, though.
As well as the sugar rush we also enjoyed birdwatching and walking.
